1 pre-made 9-inch pie crust or homemade equivalent, 1/2 cup unsalted butter, 3 large peaches peeled and sliced, 1 cup fresh strawberries hulled and halved, 3/4 cup granulated sugar, 1/4 cup brown sugar, 2 tablespoons cornstarch, 1 tablespoon lemon juice, 1 teaspoon vanilla extract, 1/4 teaspoon salt, 1 egg beaten for egg wash, 2 tablespoons coarse sugar for topping

Instructions

1. Preheat oven to 375°F (190°C). 2. Brown butter until golden and nutty. 3. Combine peaches, strawberries, sugars, cornstarch, salt, and lemon juice. 4. Add brown butter and vanilla, fold gently. 5. Fit crust into pan. 6. Pour in fruit mixture. 7. Optional: lattice top. 8. Brush with egg, sprinkle sugar. 9. Bake 45–50 minutes until golden and bubbling. 10. Cool 2 hours before slicing.
