Moist, tender loaf with ripe bananas and fresh carrots, spiced for a flavorful and comforting bread.

2 very ripe bananas, mashed
1 cup finely grated carrots
1 1/2 cups all-purpose flour
3/4 cup brown sugar
1/4 cup granulated sugar
1/2 cup vegetable oil
2 large eggs
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup chopped walnuts (optional)
1/3 cup raisins (optional)

Instructions

  • Preheat oven to 350°F and prepare a 9×5-inch pan with grease and parchment.
  • Mash bananas until mostly smooth.
  • Stir in oil and sugars until glossy.
  • Add eggs and vanilla; mix well.
  • Whisk flour, baking soda, spices, and salt separately.
  • Fold dry ingredients into wet mixture until just combined.
  • Fold in carrots and optional walnuts/raisins.
  • Pour batter into pan, smooth top, tap out air bubbles.
  • Bake 50–60 minutes; test with toothpick.
  • Cool in pan 10 minutes, then transfer to wire rack.
