A layered Tex-Mex bake with spiced beef, tortillas, melted cheese, and sour cream, all crisped up in a single skillet for a satisfying, cheesy meal.
1 lb ground beef
1 small onion, diced
2 garlic cloves, minced
1 packet taco seasoning
1/4 cup water
6 small flour tortillas
1 cup sour cream
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup red enchilada sauce
Optional toppings: tomato, avocado, green onion, shredded lettuce
Preheat oven to 375°F. Grease an oven-safe skillet.
Sauté onion in skillet for 2–3 minutes. Add garlic and cook 30 seconds.
Add ground beef; cook until browned. Drain fat.
Stir in taco seasoning and water. Simmer for 2 minutes.
Remove half the beef. Place a tortilla in the skillet.
Layer beef, sauce, sour cream, and cheese. Repeat with remaining ingredients.
Top with a tortilla and cheese. Bake uncovered for 20–25 minutes.
Let rest 5 minutes. Slice and top as desired.
