This hearty meatloaf features a base of seasoned ground beef, a fluffy layer of mashed potatoes, and a golden topping of melted cheese. A full meal in one dish that’s perfect for weeknights or family dinners.

Ingredients

  • lbs ground beef (80/20)

  • 1 cup breadcrumbs

  • 1 small onion, finely diced

  • 2 garlic cloves, minced

  • 2 large eggs

  • ½ cup milk

  • 1 tbsp Worcestershire sauce

  • ½ tsp salt

  • ¼ tsp black pepper

  • 2 lbs potatoes, peeled and cubed

  • 4 tbsp butter

  • ½ cup warm milk (for potatoes)

  • ¼ cup sour cream

  • Salt and pepper to taste

  • 1½ cups shredded cheddar cheese

Instructions

  • Preheat oven to 375°F and grease a 9×5 loaf pan.

  • In a large bowl, mix beef, breadcrumbs, onion, garlic, eggs, milk, Worcestershire, salt, and pepper.

  • Press mixture into the loaf pan and bake for 30 minutes.

  • While baking, cook potatoes until tender, then mash with butter, warm milk, sour cream, salt, and pepper.

  • Spread mashed potatoes on the baked loaf, top with shredded cheese, and return to oven for 20–25 minutes more.

  • Let rest 10 minutes before slicing and serving.
