This hearty meatloaf features a base of seasoned ground beef, a fluffy layer of mashed potatoes, and a golden topping of melted cheese. A full meal in one dish that’s perfect for weeknights or family dinners.
1½ lbs ground beef (80/20)
1 cup breadcrumbs
1 small onion, finely diced
2 garlic cloves, minced
2 large eggs
½ cup milk
1 tbsp Worcestershire sauce
½ tsp salt
¼ tsp black pepper
2 lbs potatoes, peeled and cubed
4 tbsp butter
½ cup warm milk (for potatoes)
¼ cup sour cream
Salt and pepper to taste
1½ cups shredded cheddar cheese
Preheat oven to 375°F and grease a 9×5 loaf pan.
In a large bowl, mix beef, breadcrumbs, onion, garlic, eggs, milk, Worcestershire, salt, and pepper.
Press mixture into the loaf pan and bake for 30 minutes.
While baking, cook potatoes until tender, then mash with butter, warm milk, sour cream, salt, and pepper.
Spread mashed potatoes on the baked loaf, top with shredded cheese, and return to oven for 20–25 minutes more.
Let rest 10 minutes before slicing and serving.
