A hearty, one-skillet dinner that combines the savory essence of a cheeseburger with creamy pasta. Simple to make, packed with flavor, and perfect for weeknights.
1 lb ground beef (80/20 preferred)
1 yellow onion, diced
2 garlic cloves, minced
2 cups small pasta (elbows or shells)
3 cups beef broth
1 tsp salt
1/2 tsp black pepper
2 oz cream cheese
2 cups shredded sharp cheddar
1 tbsp ketchup
1 tsp yellow mustard
1/4 cup chopped dill pickles (optional)
Cook beef and onion in a large skillet over medium-high heat until browned, 6–8 minutes.
Stir in garlic, salt, and pepper. Cook for 1 minute.
Add pasta and broth. Stir well, bring to a boil, then reduce heat. Cover and simmer 10–12 minutes.
Once pasta is cooked, lower heat and mix in cream cheese. Stir until melted.
Gradually add cheddar cheese, stirring until smooth and creamy.
Add ketchup and mustard. Stir to combine.
Stir in pickles, if using, or use as garnish.
Serve hot.
