This savory breakfast casserole features chicken, avocado, eggs, tortillas, and cheese baked into a satisfying burrito-style dish. Ideal for brunch, meal prep, or breakfast-for-dinner.
2 cups shredded cooked chicken
8 large eggs
1/3 cup whole milk
1/2 cup salsa
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 can (4 oz) diced green chiles
2 ripe avocados, diced
6 medium flour tortillas, cut into quarters
1 1/2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
Cooking spray or oil
Preheat oven to 375°F and grease a 9×13-inch baking dish.
In a large bowl, whisk eggs, milk, salsa, garlic powder, salt, and pepper.
Place one-third of the tortilla pieces in the bottom of the dish.
Layer half the chicken, avocado, green chiles, and cheeses.
Add another layer of tortillas and repeat the fillings.
Top with remaining tortillas.
Pour the egg mixture over the dish and press down lightly.
Sprinkle the rest of the cheese on top.
Bake uncovered for 35–40 minutes, until set and golden.
Let sit 5–10 minutes before serving.
