This savory breakfast casserole features chicken, avocado, eggs, tortillas, and cheese baked into a satisfying burrito-style dish. Ideal for brunch, meal prep, or breakfast-for-dinner.

Ingredients

2 cups shredded cooked chicken
8 large eggs
1/3 cup whole milk
1/2 cup salsa
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 can (4 oz) diced green chiles
2 ripe avocados, diced
6 medium flour tortillas, cut into quarters
1 1/2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
Cooking spray or oil

Instructions

  • Preheat oven to 375°F and grease a 9×13-inch baking dish.

  • In a large bowl, whisk eggs, milk, salsa, garlic powder, salt, and pepper.

  • Place one-third of the tortilla pieces in the bottom of the dish.

  • Layer half the chicken, avocado, green chiles, and cheeses.

  • Add another layer of tortillas and repeat the fillings.

  • Top with remaining tortillas.

  • Pour the egg mixture over the dish and press down lightly.

  • Sprinkle the rest of the cheese on top.

  • Bake uncovered for 35–40 minutes, until set and golden.

  • Let sit 5–10 minutes before serving.
