A warm, cheesy breakfast bake featuring everything bagels, chicken sausage, eggs, and veggies. Perfect for weekend brunch or weekday meal prep.

Ingredients

4 everything bagels, cut into cubes
12 oz pre-cooked chicken sausage, sliced
8 eggs
1 cup whole milk
1/4 cup heavy cream
1 1/2 cups shredded cheddar cheese
1/2 cup red bell pepper, diced
1/2 cup onion, diced
1 tbsp butter or non-stick spray
Salt and pepper to taste

Instructions

  • Preheat oven to 375°F. Grease a 9×13-inch baking dish.

  • Brown sausage slices in a skillet over medium heat.

  • Toast bagel cubes in the oven for 5–10 minutes if fresh.

  • Sauté peppers and onions until tender.

  • In a large bowl, whisk eggs, milk, cream, salt, and pepper. Stir in half the cheese.

  • Add bagel cubes, sausage, and veggies to the baking dish.

  • Pour the egg mixture over the top and press down gently.

  • Top with the rest of the cheese. Let sit for 20–30 minutes or refrigerate overnight.

  • Bake uncovered for 40–45 minutes until golden and set.

  • Cool slightly before serving.
