3 cups frozen shredded hash browns, thawed and drained
1 tbsp olive oil or melted butter
1/2 tsp salt
1/4 tsp black pepper
4 cooked chicken sausage links, sliced
1/2 cup chopped bell pepper
1/4 cup chopped onion
6 large eggs
1/4 cup milk or milk alternative
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
Optional: fresh herbs, hot sauce
Preheat oven to 425°F (220°C) and line a pan with parchment.
Spread and press hash browns into a 10–12 inch round crust. Drizzle with oil and season.
Bake 20–25 minutes until golden and firm.
Cook sausage slices in a pan until browned. Set aside.
Sauté peppers and onions until softened.
Whisk eggs with milk, salt, and pepper. Gently scramble until soft.
Spread eggs on crust, then add sausage and veggies. Top with cheese.
Bake for 8–10 more minutes until cheese is melted.
Cool briefly, slice, and serve.
