This high-protein cottage cheese flatbread is soft, flavorful, and incredibly versatile. Perfect as a wrap, dipper, or healthy snack.
1 cup cottage cheese
2 eggs
1/2 cup oat flour (or almond flour for low-carb)
1/2 tsp baking powder
1/4 tsp salt
Optional: 1/2 tsp garlic powder, 1 tsp Italian seasoning
Blend all ingredients in a blender until smooth. Let the batter rest for 5 minutes.
Heat a nonstick skillet over medium heat and lightly grease.
Pour batter into the pan, spreading into a circle or oval about 1/4 inch thick.
Cook for 3–4 minutes on the first side until bubbles form. Flip and cook 2–3 minutes more.
Let cool slightly before serving. Repeat with remaining batter.
