A creamy and hearty crockpot soup made with tender potatoes, fresh broccoli, and cheddar cheese, perfect for cozy meals.

Ingredients

4 cups diced potatoes
3 cups chopped broccoli florets
1 small onion, diced
3 cloves garlic, minced
3 cups chicken broth
1 cup milk
1 cup heavy cream
2 cups shredded cheddar cheese
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon dried thyme
2 tablespoons all-purpose flour

Instructions

  • Sauté onion and garlic in butter until soft.
  • Add to crockpot with potatoes, broth, and seasonings.
  • Cook on low 6–7 hours or high 3–4 hours.
  • Stir in broccoli during the last hour.
  • Whisk flour with milk and pour into soup.
  • Lightly mash some potatoes.
  • Gradually stir in cream and cheese until smooth.
  • Cook 15–20 minutes more and serve.
