2 cups gluten-free rolled oats
1/2 cup almond butter or peanut butter
1/3 cup honey or maple syrup
2 ripe bananas, mashed
1/4 cup unsweetened applesauce
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
1/3 cup chopped nuts
1/3 cup dried fruit
2 tablespoons chia seeds or flaxseeds

Instructions

  • Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  • Mash bananas and mix with nut butter, honey, applesauce, and vanilla.
  • Mix oats, baking powder, cinnamon, and salt separately.
  • Combine dry and wet ingredients, then fold in nuts, dried fruit, and seeds.
  • Press mixture firmly into the pan.
  • Bake 20–25 minutes until set and lightly golden.
  • Cool completely before slicing.
