A creamy, tender Easy Jiffy Corn Casserole with a golden top, ideal for family dinners, holidays, and gatherings.

1 box (8.5 ounces) Jiffy corn muffin mix
1 can (15 ounces) whole kernel corn, drained
1 can (15 ounces) creamed corn
1 cup sour cream
1/2 cup unsalted butter, melted
2 large eggs
1 cup shredded cheddar cheese (optional)
1/4 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Preheat oven to 350°F and grease a 9×13-inch dish.
  • Whisk melted butter, sour cream, and eggs in a large bowl until smooth.
  • Stir in whole kernel corn and creamed corn.
  • Fold in corn muffin mix until just combined.
  • Add cheese if using, folding gently.
  • Season with salt and pepper.
  • Pour into prepared dish and spread evenly.
