A tender, gluten-free cinnamon roll bake that’s perfect for breakfast, brunch, or a cozy treat.

Ingredients

Scale

2 ½ cups gluten-free all-purpose flour blend (with xanthan gum)
2 tablespoons granulated sugar
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, softened
¾ cup milk or dairy-free milk alternative
1 large egg
1 teaspoon vanilla extract
Filling:
½ cup brown sugar
2 tablespoons ground cinnamon
3 tablespoons unsalted butter, melted
Glaze:
1 cup powdered sugar
2–3 tablespoons milk or dairy-free milk alternative
½ teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch dish.
  • Mix dry ingredients in a bowl.
  • Beat butter, milk, egg, and vanilla in another bowl, then add dry ingredients to form dough.
  • Roll dough into a 9×12-inch rectangle, brush with butter, sprinkle cinnamon sugar.
  • Roll into a log, cut into 12 slices, arrange in dish.
  • Bake 25–30 minutes until golden.
  • Whisk glaze ingredients and drizzle over warm rolls. Serve.
