A crustless, gluten-free quiche featuring fresh spinach and tangy feta, perfect for brunch or lunch.

6 large eggs
1 cup milk or half-and-half
1 cup fresh spinach, chopped
1/2 cup crumbled feta cheese
1/4 cup grated Parmesan cheese
1 small onion, finely chopped
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg (optional)
1 tablespoon olive oil or butter
1 tablespoon chopped fresh herbs (parsley, chives, or dill)

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9-inch dish.
  • Sauté onion until soft, add garlic for 1 minute, then remove from heat.
  • Whisk eggs with milk, salt, pepper, and nutmeg. Fold in onions, garlic, spinach, feta, Parmesan, and herbs.
  • Pour mixture into dish and bake 35–40 minutes until golden and set.
  • Cool 5–10 minutes before slicing.
