Flaky Mediterranean quiche filled with spinach, tangy feta, and creamy custard, ideal for brunch or a light meal.

1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
5 cups fresh spinach, chopped
4 large eggs
1 cup whole milk
1/2 cup heavy cream
1 cup crumbled feta cheese
1/2 cup shredded mozzarella (optional)
1/4 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 teaspoon dried oregano
1 teaspoon fresh dill or parsley, chopped
1 pre-made 9-inch pie crust (or homemade shortcrust)

Instructions

  • Preheat oven to 375°F. Prepare pie crust in a 9-inch pan.
  • Heat olive oil, sauté onion until soft, add garlic, cook 1 min.
  • Add spinach, cook 2–3 min until wilted, cool slightly.
  • Whisk eggs, milk, cream; stir in feta, mozzarella, seasonings, herbs. Fold in spinach.
  • Pour mixture into crust, smooth top, bake 35–45 min until set and lightly golden.
  • Cool 10 min before slicing. Serve warm or room temperature.
