Golden chicken breasts simmer in a rich basil cream sauce and are topped with melted mozzarella in this easy one-skillet meal.
2 boneless skinless chicken breasts
1 tbsp olive oil
1 tbsp butter
2 garlic cloves, minced
1/2 cup low-sodium chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese (optional)
1/2 cup chopped fresh basil
4 slices mozzarella cheese
Salt and pepper to taste
Season chicken with salt and pepper.
Heat oil and butter in a skillet over medium-high heat.
Sear chicken for 4–5 minutes per side until cooked through. Remove and set aside.
Lower heat to medium, add garlic, and cook for 30 seconds.
Pour in broth, scraping up browned bits.
Stir in cream and basil. Simmer for 3–4 minutes.
Return chicken to pan. Top with mozzarella.
Cover and cook until cheese melts, or broil briefly for browning.
Spoon sauce over chicken and serve hot.
