2 pounds Yukon Gold potatoes, cut into 1-inch pieces
1 packet Lipton onion soup mix
1/4 cup unsalted butter, melted
2 tablespoons olive oil
1/3 cup chicken or vegetable broth
2 cloves garlic, minced
1/2 teaspoon black pepper
1 tablespoon chopped fresh parsley (optional)

Instructions

  • Wash and cut potatoes into 1-inch chunks.
  • Lightly grease the slow cooker.
  • Place potatoes in the slow cooker.
  • Mix butter, olive oil, garlic, and pepper.
  • Pour over potatoes and toss to coat.
  • Sprinkle onion soup mix and stir gently.
  • Add broth.
  • Cover and cook on low 5–6 hours or high 3–4 hours.
  • Stir halfway through cooking.
  • Check for fork-tender potatoes.
  • Garnish with parsley and serve warm.
