This easy tater tot casserole features seasoned ground beef, mixed vegetables, a creamy soup layer, melted cheddar, and a crispy tater tot topping—perfect for busy nights and comfort food cravings.
1 lb ground beef
1 small yellow onion, chopped
2 garlic cloves, minced
1 can (10.5 oz) cream of mushroom soup
2 cups frozen mixed vegetables
1 ½ cups shredded cheddar cheese
1 (28–32 oz) bag frozen tater tots
Salt and pepper to taste
Cooking spray
Preheat oven to 375°F (190°C) and grease a 9×13-inch dish.
Cook ground beef over medium heat until browned. Drain fat.
Add onion and garlic. Cook until soft, about 3 minutes.
Stir in soup and frozen vegetables. Warm through.
Season with salt and pepper.
Spread mixture into baking dish and sprinkle cheese on top.
Arrange frozen tater tots evenly across the top.
Bake uncovered for 40–45 minutes, until bubbly and golden.
