This easy tater tot casserole features seasoned ground beef, mixed vegetables, a creamy soup layer, melted cheddar, and a crispy tater tot topping—perfect for busy nights and comfort food cravings.

1 lb ground beef
1 small yellow onion, chopped
2 garlic cloves, minced
1 can (10.5 oz) cream of mushroom soup
2 cups frozen mixed vegetables
1 ½ cups shredded cheddar cheese
1 (2832 oz) bag frozen tater tots
Salt and pepper to taste
Cooking spray

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch dish.

  • Cook ground beef over medium heat until browned. Drain fat.

  • Add onion and garlic. Cook until soft, about 3 minutes.

  • Stir in soup and frozen vegetables. Warm through.

  • Season with salt and pepper.

  • Spread mixture into baking dish and sprinkle cheese on top.

  • Arrange frozen tater tots evenly across the top.

  • Bake uncovered for 40–45 minutes, until bubbly and golden.

  • Rest 5–10 minutes before serving.
