Tender carrots slow-cooked in a rich honey and butter glaze, creating a glossy, sweet side dish perfect for weeknight dinners or holiday celebrations.

2 pounds carrots, peeled and cut into 1-inch pieces
1/3 cup honey
1/4 cup melted butter
2 tablespoons brown sugar (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cloves garlic, minced (optional)
1 tablespoon chopped parsley

Instructions

  • Peel and cut carrots into even pieces.
  • Place carrots in slow cooker.
  • Whisk together honey, butter, brown sugar, salt, pepper, and garlic.
  • Pour over carrots and stir to coat.
  • Cover and cook on low 4–5 hours or high 2–3 hours.
  • Stir once or twice during cooking.
  • Cook uncovered 20–30 minutes if glaze is thin.
  • Garnish with parsley before serving.
