For the Stir-Fry Sauce:
3 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp sriracha or chili garlic sauce
2 tsp brown sugar or honey
1/2 tsp ground ginger
For the Bowl:
1 lb ground beef (85–90% lean)
2 garlic cloves, minced
Salt and pepper to taste
1 tbsp sesame oil or olive oil
1.5 cups broccoli florets
1/2 cup carrots, thinly sliced
1 bell pepper, sliced
2 cups cooked white or brown rice
2 green onions, chopped
Sesame seeds (optional)
Cilantro or lime wedge for garnish (optional)
Cook rice according to package directions.
In a bowl, whisk together sauce ingredients and set aside.
Heat oil in a skillet over medium-high. Add veggies and garlic; sauté 5–6 minutes until tender-crisp. Set aside.
In the same pan, brown the ground beef with salt and pepper.
Add sauce to beef; simmer 2–3 minutes until thickened.
Assemble bowls with rice, veggies, and beef. Top with green onions and sesame seeds.
