  • 1.5 lbs boneless, skinless chicken thighs, chopped

  • 1/2 cup sweet chili sauce

  • 2 tablespoons soy sauce

  • 1 tablespoon honey or brown sugar

  • 1 tablespoon fresh ginger, grated

  • 2 garlic cloves, minced

  • 1 tablespoon neutral oil

  • 1.5 cups jasmine rice

  • 1 cup steamed broccoli

  • 1/2 cup shredded carrots

  • 1 red bell pepper, sliced

  • 1/2 cucumber, sliced

  • Green onions, chopped

  • Fresh cilantro

  • Lime wedges

  • Sesame seeds (optional)

Instructions

  • In a bowl, mix sweet chili sauce, soy sauce, honey, garlic, and ginger. Add chicken and toss to coat. Marinate for 20–30 minutes.

  • Cook jasmine rice according to package directions.

  • Prep vegetables and garnishes.

  • Heat oil in a skillet over medium-high. Add marinated chicken and sear until cooked through and caramelized, about 7–9 minutes.

  • Assemble bowls with rice, chicken, vegetables, and toppings. Serve with lime.
