1.5 lbs boneless, skinless chicken thighs, chopped
1/2 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon honey or brown sugar
1 tablespoon fresh ginger, grated
2 garlic cloves, minced
1 tablespoon neutral oil
1.5 cups jasmine rice
1 cup steamed broccoli
1/2 cup shredded carrots
1 red bell pepper, sliced
1/2 cucumber, sliced
Green onions, chopped
Fresh cilantro
Lime wedges
Sesame seeds (optional)
In a bowl, mix sweet chili sauce, soy sauce, honey, garlic, and ginger. Add chicken and toss to coat. Marinate for 20–30 minutes.
