1 9-inch unbaked pie crust
4 cups fresh strawberries, hulled and halved
1 cup granulated sugar
3 tablespoons cornstarch
1/4 cup water
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
1/4 teaspoon salt
Whipped cream for serving (optional)
Slivered almonds for garnish (optional)

Instructions

  • Preheat oven to 375°F. Prepare or blind-bake pie crust.
  • Wash, hull, and halve strawberries.
  • Mix sugar and cornstarch with water in a saucepan. Cook until thickened.
  • Stir in lemon juice and vanilla. Cool slightly.
  • Fold glaze into strawberries and pour into crust.
  • Chill for at least 2 hours until set.
  • Serve with whipped cream or almonds if desired.
