A gorgeous Valentine’s Day Strawberry Pie featuring juicy berries, a flaky crust, and optional whipped cream for a smooth, elegant dessert.

1 pre-made or homemade 9-inch pie crust
4 cups fresh strawberries, hulled and halved
3/4 cup granulated sugar
2 tablespoons cornstarch
1/2 cup water
1 teaspoon lemon juice
1 teaspoon vanilla extract
1/2 cup heavy cream, whipped (optional)
1 tablespoon powdered sugar (optional, for cream)
Fresh mint leaves for garnish (optional)

Instructions

  • Preheat oven to 375°F (190°C) for homemade crust.
  • Roll out dough or prepare pre-made crust; blind bake 15–20 minutes, then cool.
  • Rinse, hull, and halve strawberries.
  • In a saucepan, combine sugar, cornstarch, and water; cook until thickened.
  • Stir in lemon juice and vanilla; cool slightly.
  • Whip cream with powdered sugar if desired.
  • Spread cream layer on cooled crust, arrange berries, pour glaze over top.
  • Chill at least two hours.
  • Garnish with mint leaves before serving.
