A bold blend of taco, lasagna, and beef soup—this cheesy, creamy mashup is a one-pot comfort dish packed with flavor and easy to make.
1 tbsp olive oil
1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
1 packet taco seasoning
1 (15 oz) can crushed tomatoes
2 tbsp tomato paste
4 cups beef broth
6–8 lasagna noodles, broken
4 oz cream cheese
1 cup black beans (optional)
1 cup corn (optional)
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
Salt and pepper, to taste
Heat oil in a soup pot. Brown ground beef. Drain fat if needed.
Add onion; cook until soft. Stir in garlic and cook briefly.
Add taco seasoning and mix well.
Stir in crushed tomatoes and tomato paste. Simmer briefly.
Add broth and broken noodles. Cook 10–12 minutes.
Stir in cream cheese until fully melted.
Add beans and corn, if using. Cook 5 more minutes.
Mix in cheeses until melted.
Taste, adjust seasoning, and serve hot.
