Creamy, garlic-and-herb Boursin chicken skillet ready in 30 minutes, perfect for a quick, flavorful, and indulgent meal.
2 large boneless, skinless chicken breasts
Salt and freshly ground black pepper, to taste
1 tablespoon olive oil
2 cloves garlic, minced
1 small shallot, finely diced
1/4 cup dry white wine (or chicken broth)
1/2 cup chicken broth
4 ounces Boursin cheese, garlic and herb flavor
1 teaspoon fresh thyme leaves
1 tablespoon unsalted butter
Optional: 1 cup baby spinach or 1/4 cup chopped sun-dried tomatoes
Pat chicken dry and season with salt and pepper.
Heat olive oil in skillet over medium-high heat; sear chicken 3–4 minutes per side until golden. Remove and cover.
Sauté garlic and shallots 1–2 minutes until fragrant.
Deglaze with wine or broth, scraping pan; reduce slightly.
Stir in chicken broth and Boursin cheese until smooth.
Add thyme and optional vegetables; simmer 1–2 minutes.
Return chicken; simmer 2–3 minutes.
Stir in butter, adjust seasoning, and serve.
