1 lb boneless skinless chicken breast
1 tbsp olive oil
1 tsp chili powder
1 tsp cumin
½ tsp smoked paprika
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
1 cup brown rice (uncooked)
1 can black beans, rinsed and drained
1 cup corn kernels
1 avocado, diced
1 cup cherry tomatoes, halved
¼ cup red onion, finely chopped
½ cup plain Greek yogurt
1 tbsp lime juice
¼ tsp garlic powder (for crema)
Salt to taste
Optional toppings: cheese, cilantro, jalapeños, salsa
Cut chicken into cubes. Mix with oil and spices. Let marinate 20–30 minutes.
