This easy one-pan meal brings together taco-spiced beef, melted cheese, crisp tortilla chips, and soft tortillas for a hearty, comforting skillet dinner topped with fresh, cool garnishes.
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 can (10 oz) diced tomatoes with green chiles
2–3 flour tortillas, torn into pieces
1½ cups shredded cheddar cheese
1½ cups shredded Monterey Jack cheese
1½ cups thick tortilla chips
½ cup sour cream
1 cup shredded lettuce
Optional toppings: avocado, hot sauce, jalapeños, cilantro
Preheat oven to 400°F.
Brown beef in skillet over medium heat.
Add onion and garlic, cook until soft.
Drain grease, then stir in seasoning and tomatoes. Simmer 5 minutes.
Mix in tortilla pieces.
Sprinkle with half the cheese, add chips, then top with remaining cheese.
Bake 8–10 minutes. Broil briefly for extra crunch.
Top with sour cream and lettuce before serving.
