A cheesy, savory combination of crispy potatoes and smoked sausage seasoned with ranch and topped with melty cheddar. Quick, comforting, and perfect for any night of the week.
1.5 lbs potatoes, diced
14 oz smoked sausage, sliced
1 packet ranch seasoning (about 1 oz)
1½ cups shredded cheddar cheese
2 tbsp olive oil or butter
Salt and pepper to taste
Chopped parsley or green onions for garnish
Par-cook diced potatoes by microwaving or boiling for 5–7 minutes.
In a large skillet, brown the sausage slices and set aside.
Add potatoes to the same pan with oil and half of the ranch seasoning. Cook until golden and crispy.
Return sausage to the skillet, sprinkle remaining ranch mix, and stir to combine.
Top with cheese, cover, and let melt on low heat.
Garnish and serve hot.
