A hearty and nourishing homemade chicken noodle soup featuring tender chicken, soft noodles, and flavorful vegetables in a savory broth. Ideal for chilly evenings or comforting meals.
2 tbsp olive oil
1 medium onion, diced
2 carrots, sliced
2 celery stalks, chopped
3 garlic cloves, minced
8 cups low-sodium chicken broth
1½ lbs boneless, skinless chicken thighs or breasts
1 tsp dried thyme or a few sprigs fresh thyme
1 bay leaf
Salt and pepper to taste
6 oz egg noodles
2 tbsp fresh parsley, chopped
1 tbsp lemon juice (optional)
Warm olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 6–8 minutes.
Stir in garlic, thyme, bay leaf, salt, and pepper. Cook for 30 seconds.
Add broth and bring to a boil.
Add chicken and reduce to a simmer. Cook for 15–20 minutes.
Remove and shred chicken.
Add noodles to the pot and cook 6–8 minutes.
Return shredded chicken to the pot and simmer 5 more minutes.
Stir in lemon juice and parsley. Taste and adjust seasoning.
