This creamy Cajun chicken pasta blends tender chicken, a rich spiced sauce, and pasta into a bold, satisfying dinner that’s quick enough for weeknights and tasty enough for special occasions.
2 boneless, skinless chicken breasts
2 tablespoons Cajun seasoning (divided)
1 tablespoon olive oil
1 tablespoon butter
3 cloves garlic, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup heavy cream
½ cup chicken broth
½ cup freshly grated Parmesan cheese
8 oz pasta (fettuccine, penne, or linguine)
Salt and pepper to taste
Chopped parsley for garnish (optional)
Slice chicken into strips and coat with 1 tablespoon Cajun seasoning.
Boil pasta in salted water; reserve ½ cup pasta water before draining.
Heat oil and butter in skillet over medium-high. Sear chicken 4–5 minutes per side. Remove.
Sauté bell peppers in same pan for 3–4 minutes.
Add garlic and cook 30 seconds. Stir in cream and broth; simmer 2–3 minutes.
Mix in Parmesan and remaining Cajun seasoning. Simmer until slightly thickened.
Add pasta and chicken back to the skillet. Toss to coat. Add pasta water if needed.
Adjust seasoning and serve hot with optional parsley garnish.
