Creamy Chicken Alfredo Gnocchi Soup blends tender chicken, fluffy gnocchi, and a smooth Parmesan-infused broth into a cozy, comforting dish perfect for any night of the week.
1 lb boneless, skinless chicken breasts or thighs
1 tbsp olive oil
1 tbsp butter
1 small onion, finely chopped
3 cloves garlic, minced
4 cups chicken stock (low-sodium)
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese
1 tsp Italian seasoning
1 (16 oz) package potato gnocchi
2 cups baby spinach (optional)
Salt and black pepper to taste
Heat oil and butter in a large pot over medium heat. Season chicken, sear on both sides until browned. Remove and set aside.
Sauté onion until soft, then add garlic and cook briefly.
Pour in chicken stock and return chicken. Simmer 15–20 minutes.
Remove and shred chicken. Reduce heat.
Stir in cream and Parmesan until smooth. Adjust seasoning.
Add gnocchi and cook until tender (3–5 minutes).
Return chicken and stir in spinach. Simmer 2 more minutes.
Serve hot, garnished as desired.
