Tender chicken simmered in a smooth, flavorful coconut sauce, ready in 30 minutes.
1 pound boneless, skinless chicken thighs or breasts
1 tablespoon olive oil
1 small onion, finely chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon curry powder or smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 can (13.5 oz) full-fat coconut milk
1 tablespoon fish sauce or soy sauce
1 tablespoon lime juice
1/2 cup bell pepper, thinly sliced (optional)
1/2 cup carrots, julienned (optional)
1/2 cup snap peas or green beans (optional)
Fresh cilantro or basil for garnish
Trim and cut chicken into bite-sized pieces. Heat olive oil in a skillet over medium-high heat.
Sear chicken 3–4 minutes per side until golden. Remove and set aside.
Sauté onion until softened, then add garlic and ginger until fragrant.
Stir in spices and toast briefly.
Add coconut milk and fish sauce, bring to simmer.
Return chicken and vegetables, simmer 5–7 minutes until cooked.
Garnish with herbs and serve immediately.
