1.5 pounds boneless, skinless chicken breasts or thighs
Salt and black pepper, to taste
1 teaspoon paprika
2 tablespoons olive oil
3 tablespoons unsalted butter
6 cloves garlic, minced
1 small onion, finely chopped (optional)
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese

1 tablespoon chopped fresh parsley
8 ounces mushrooms, sliced (optional)
Pat chicken dry and season with salt, pepper, and paprika.
Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden. Remove and set aside.
Reduce heat to medium; sauté garlic and onions for 1–2 minutes. Add mushrooms if using and cook until browned.
Deglaze pan with chicken broth, scraping browned bits. Simmer 2–3 minutes.
Stir in heavy cream and Parmesan; simmer 4–5 minutes until sauce thickens.
Return chicken to skillet; simmer 5–7 minutes until cooked through.
