2 cups shredded cooked chicken
1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
½ teaspoon smoked paprika
4 cups low-sodium chicken broth
1 (15 oz) can fire-roasted tomatoes
1 (15 oz) can black beans, rinsed and drained
1 cup corn kernels
1 cup red enchilada sauce
1 (4 oz) can diced green chiles
4 oz cream cheese, cubed
½ cup plain full-fat Greek yogurt
Salt and pepper, to taste
Optional toppings: avocado, shredded cheese, lime wedges, chopped cilantro, tortilla chips
Heat olive oil in a large pot over medium heat.
Sauté onion for 5 minutes until soft.
Add garlic and cook 30 seconds more.
Stir in chili powder, cumin, and smoked paprika. Cook 30 seconds.
Add broth, tomatoes, enchilada sauce, and green chiles. Bring to a simmer.
Add chicken, black beans, and corn. Simmer uncovered for 15–20 minutes.
Reduce heat and stir in cream cheese until fully melted.
