A cozy, flavorful chicken dish cooked in one skillet, smothered in a creamy garlic mushroom sauce. Perfect for weeknights or slow dinners at home.

Ingredients

2 boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons unsalted butter
8 oz cremini mushrooms, sliced
3 cloves garlic, minced
1 teaspoon thyme (fresh or ½ tsp dried)
½ cup low-sodium chicken broth
¾ cup heavy cream
¼ cup Parmesan, grated
Salt and pepper to taste
Optional: ¼ cup dry white wine

Instructions

  • Pat chicken dry and season with salt and pepper.

  • Heat 1 tbsp butter and olive oil in a large skillet.

  • Sear chicken 5–6 minutes per side until browned and cooked. Remove and set aside.

  • Add remaining butter and mushrooms. Cook 8 minutes until golden.

  • Stir in garlic and thyme. Cook 1 minute.

  • Add broth (and wine), scraping up browned bits. Simmer 2–3 minutes.

  • Stir in cream and Parmesan. Simmer 3–4 minutes until thickened.

  • Return chicken to skillet and simmer 2–3 minutes more. Serve hot.
