A cozy, flavorful chicken dish cooked in one skillet, smothered in a creamy garlic mushroom sauce. Perfect for weeknights or slow dinners at home.
2 boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons unsalted butter
8 oz cremini mushrooms, sliced
3 cloves garlic, minced
1 teaspoon thyme (fresh or ½ tsp dried)
½ cup low-sodium chicken broth
¾ cup heavy cream
¼ cup Parmesan, grated
Salt and pepper to taste
Optional: ¼ cup dry white wine
Pat chicken dry and season with salt and pepper.
Heat 1 tbsp butter and olive oil in a large skillet.
Sear chicken 5–6 minutes per side until browned and cooked. Remove and set aside.
Add remaining butter and mushrooms. Cook 8 minutes until golden.
Stir in garlic and thyme. Cook 1 minute.
Add broth (and wine), scraping up browned bits. Simmer 2–3 minutes.
Stir in cream and Parmesan. Simmer 3–4 minutes until thickened.
Return chicken to skillet and simmer 2–3 minutes more. Serve hot.
