Creamy One-Pot Chicken Pot Pie Orzo is a quick, comforting meal with tender chicken, vegetables, and orzo in a rich, creamy sauce, ready in 30 minutes.
1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
2 tablespoons butter
1 medium onion, finely chopped
2 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 cup frozen peas
1/4 cup all-purpose flour
4 cups chicken broth
1 cup milk or cream
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
1 1/2 cups orzo pasta
2 tablespoons chopped fresh parsley, for garnish
Melt butter in a large pot over medium heat. Cook chicken 4–5 minutes until lightly browned, then remove.
Sauté onion, garlic, carrots, and celery 3–4 minutes until softened.
Stir in flour and cook 1–2 minutes. Gradually add chicken broth while stirring.
Add milk or cream, chicken, orzo, thyme, salt, pepper, and paprika. Mix well.
Cover and simmer on low 12–15 minutes until orzo is tender and chicken is fully cooked.
Stir in peas during the last 3 minutes. Garnish with parsley and serve hot.
