A creamy one-skillet chicken dinner packed with flavor from garlic, sun-dried tomatoes, spinach, and parmesan, all in a rich, silky sauce.
4 boneless skinless chicken breasts
1 tbsp olive oil
2 tbsp butter, divided
3 garlic cloves, minced
1/2 cup sun-dried tomatoes, chopped
2 cups baby spinach
1/2 cup low-sodium chicken broth
1 cup heavy cream
1/2 cup grated parmesan cheese
1 tsp Italian seasoning
Salt and pepper, to taste
Season chicken with salt, pepper, and Italian seasoning.
Heat olive oil and 1 tbsp butter in a skillet. Sear chicken 5–6 mins per side until cooked through. Remove from skillet.
Add remaining butter and garlic; cook 30 seconds.
Stir in sun-dried tomatoes. Add spinach and let it wilt.
Pour in broth, scraping the bottom of the skillet.
Stir in cream and parmesan. Simmer until sauce thickens.
Return chicken to skillet. Simmer 3–4 minutes more.
Serve warm, topped with extra parmesan if desired.
