Stuffed croissants filled with crunchy fried chicken and melted cheddar—perfect for a hearty breakfast, brunch gathering, or easy dinner.
4 large croissants
4 chicken tenders or thin breast pieces
1 cup buttermilk
1 cup all-purpose flour
1/4 cup cornstarch
1 tsp garlic powder
1 tsp paprika
1/4 tsp cayenne (optional)
Salt and black pepper to taste
2 eggs, beaten
1 1/2 cups sharp cheddar, shredded
2 tbsp butter, melted
Oil for frying
Marinate chicken in buttermilk with salt for 20–30 minutes.
Combine flour, cornstarch, and spices in a shallow bowl.
Beat eggs in a separate bowl.
Dredge chicken in flour, then egg, then flour again. Press to coat.
Heat oil to 350°F and fry chicken until crisp and cooked through.
Slice croissants and fill each with cheese and a piece of chicken.
Brush with butter and bake at 375°F for 8–10 minutes.
Cool slightly and serve warm.
