Golden, crispy chicken cutlets served with creamy garlic butter orzo—a flavorful, satisfying meal that’s easy to prepare and perfect for any night of the week.

2 boneless skinless chicken breasts
1/2 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/2 cup Italian breadcrumbs
3/4 cup grated Parmesan cheese
1/2 tsp garlic powder
Salt and pepper, to taste
3 tbsp olive oil
3 tbsp butter, divided
3 cloves garlic, minced
1 cup orzo pasta
2 1/4 cups chicken broth
Zest and juice of 1 lemon
2 tbsp chopped parsley or basil (optional)

Instructions

  • Slice and pound chicken into thin cutlets. Season with salt, pepper, and garlic powder.

  • Prepare breading station with flour, beaten eggs, and a mix of breadcrumbs and Parmesan.

  • Dredge chicken in flour, dip in egg, then press into breadcrumb mixture. Let rest 5–10 minutes.

  • In a skillet, heat olive oil over medium-high. Cook cutlets 3–4 minutes per side until golden. Set aside.

  • Wipe out skillet. Melt 2 tbsp butter and sauté garlic until fragrant. Stir in orzo and toast briefly.

  • Add broth and simmer 10–12 minutes until orzo is tender and liquid is mostly absorbed.

  • Stir in remaining butter and lemon zest. Season to taste and let rest briefly.

  • Serve orzo with chicken cutlets, lemon juice, and herbs.
