A comforting Italian classic, Pasta e Piselli combines tender pasta with sweet peas in a lightly seasoned broth. Quick to make and full of flavor, it’s perfect for weeknight dinners or cozy lunches.
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup fresh or frozen peas
4 cups vegetable or chicken broth
1 cup ditalini pasta
Salt and pepper, to taste
1/4 cup grated Parmesan cheese
Fresh parsley, chopped, for garnish
Heat olive oil in a medium saucepan over medium heat. Sauté onions until soft and translucent, about 5 minutes.
Add garlic and cook for 30 seconds until fragrant.
Stir in peas and broth, simmer for 5 minutes.
Add pasta and cook according to package instructions until al dente.
Season with salt and pepper, then mix in Parmesan cheese.
Serve garnished with chopped parsley and an optional drizzle of olive oil.
