A quick and balanced dinner featuring seasoned taco meat served over fluffy rice with beans, fresh vegetables, and creamy toppings.
1 cup long-grain white rice
2 cups water
1 pound ground beef or ground turkey
1 tablespoon olive oil
2 tablespoons taco seasoning
1/3 cup tomato sauce or salsa
1 can black beans, rinsed and drained
1 cup corn kernels
1 cup shredded lettuce
1 cup diced tomatoes
1 avocado, sliced
1/2 cup shredded cheddar cheese
1/2 cup sour cream or Greek yogurt
1/2 cup salsa
Salt to taste
Lime wedges for serving (optional)
Rinse rice under cold water until water runs mostly clear.
Combine rice, water, and a pinch of salt in a saucepan and bring to a boil.
Reduce heat to low, cover, and cook for about 15 minutes until rice is tender.
Heat olive oil in a skillet over medium heat and add ground meat.
Cook meat until browned, breaking it apart with a spoon.
Drain excess fat if necessary.
Stir in taco seasoning and tomato sauce or salsa.
Simmer the meat mixture for 3 to 4 minutes until slightly thickened.
Warm black beans in a small saucepan with a splash of water.
Fluff cooked rice with a fork and divide into serving bowls.
Spoon taco meat and beans over the rice.
Add corn, lettuce, tomatoes, cheese, avocado, and sour cream.
Top with salsa and serve immediately.
