A fresh and balanced Mediterranean bowl featuring lemon-oregano chicken, vibrant vegetables, grains, and creamy tzatziki. Ideal for clean eating and meal prep.
1½ lbs chicken breasts or thighs
3 tbsp olive oil
Juice of 1 lemon
3 garlic cloves, minced
1½ tsp dried oregano
Salt and pepper
2 cups cooked quinoa, brown rice, or cauliflower rice
1 cup cherry tomatoes, halved
1 cup cucumber, chopped
¼ red onion, thinly sliced
½ cup crumbled feta
⅓ cup chopped kalamata olives (optional)
½ cup tzatziki
Fresh dill or parsley for garnish
Combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and marinate for at least 30 minutes.
Cook chicken in a skillet or grill pan for 5–6 minutes per side. Let rest, then slice.
Prepare grains of choice. Season lightly.
Chop vegetables and set aside.
Build bowls: start with grains, then layer chicken, veggies, feta, and olives. Top with tzatziki and herbs.
Serve immediately or store in containers for up to 4 days.
