A fresh and balanced Mediterranean bowl featuring lemon-oregano chicken, vibrant vegetables, grains, and creamy tzatziki. Ideal for clean eating and meal prep.

Ingredients

  • lbs chicken breasts or thighs

  • 3 tbsp olive oil

  • Juice of 1 lemon

  • 3 garlic cloves, minced

  • 1½ tsp dried oregano

  • Salt and pepper

  • 2 cups cooked quinoa, brown rice, or cauliflower rice

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, chopped

  • ¼ red onion, thinly sliced

  • ½ cup crumbled feta

  • ⅓ cup chopped kalamata olives (optional)

  • ½ cup tzatziki

  • Fresh dill or parsley for garnish

Instructions

  • Combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and marinate for at least 30 minutes.

  • Cook chicken in a skillet or grill pan for 5–6 minutes per side. Let rest, then slice.

  • Prepare grains of choice. Season lightly.

  • Chop vegetables and set aside.

  • Build bowls: start with grains, then layer chicken, veggies, feta, and olives. Top with tzatziki and herbs.

  • Serve immediately or store in containers for up to 4 days.
