1½ pounds boneless skinless chicken breast cut into cubes
3 tablespoons olive oil
2 tablespoons ranch seasoning blend
3 cloves garlic minced
2 tablespoons grated Parmesan cheese plus extra for topping
1 tablespoon lemon juice
½ teaspoon salt
½ teaspoon black pepper
Wooden or metal skewers
In a large bowl stir olive oil, ranch seasoning, garlic, Parmesan cheese, lemon juice, salt, and pepper.
Add chicken cubes and coat evenly with the marinade mixture.
Cover and refrigerate for 30 to 60 minutes.
Heat grill to medium high heat around 400°F.
Thread marinated chicken pieces onto skewers with slight spacing between cubes.
Place skewers on the grill and cook about 4 to 5 minutes per side.
Turn skewers regularly until chicken reaches an internal temperature of 165°F.
