A hearty, flavorful bake featuring lean ground turkey, roasted sweet potatoes, and melty cheese — perfect for busy weeknights or meal prep.
1 lb ground turkey (93% lean)
2 medium sweet potatoes, peeled and diced
1 small yellow onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
2 cups fresh spinach (or 1 cup frozen, thawed)
1 cup shredded cheese (cheddar or mozzarella)
2 tbsp olive oil
1 tsp ground cumin
1 tsp paprika
Salt and pepper to taste
Preheat oven to 375°F (190°C). Grease a 9×13” baking dish.
Toss diced sweet potatoes with 1 tbsp olive oil, salt, and pepper. Roast on a baking sheet for 20 minutes.
Meanwhile, heat 1 tbsp olive oil in a skillet. Sauté onion until translucent, then add garlic.
Add ground turkey and cook until browned. Season with cumin, paprika, salt, and pepper.
Stir in bell pepper and spinach. Cook until spinach wilts.
In baking dish, layer roasted sweet potatoes, then turkey mixture. Top with cheese.
Bake for 15–20 minutes until cheese is bubbly. Let rest 5 minutes before serving.
