A hearty, flavorful bake featuring lean ground turkey, roasted sweet potatoes, and melty cheese — perfect for busy weeknights or meal prep.

  • 1 lb ground turkey (93% lean)

  • 2 medium sweet potatoes, peeled and diced

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • 1 red bell pepper, diced

  • 2 cups fresh spinach (or 1 cup frozen, thawed)

  • 1 cup shredded cheese (cheddar or mozzarella)

  • 2 tbsp olive oil

  • 1 tsp ground cumin

  • 1 tsp paprika

  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13” baking dish.

  • Toss diced sweet potatoes with 1 tbsp olive oil, salt, and pepper. Roast on a baking sheet for 20 minutes.

  • Meanwhile, heat 1 tbsp olive oil in a skillet. Sauté onion until translucent, then add garlic.

  • Add ground turkey and cook until browned. Season with cumin, paprika, salt, and pepper.

  • Stir in bell pepper and spinach. Cook until spinach wilts.

  • In baking dish, layer roasted sweet potatoes, then turkey mixture. Top with cheese.

  • Bake for 15–20 minutes until cheese is bubbly. Let rest 5 minutes before serving.
