A refreshing and colorful broccoli salad with juicy grapes and crunchy sunflower seeds, ideal for light meals or entertaining.
4 cups fresh broccoli florets
1 cup red grapes, halved
1/2 cup sunflower seeds, lightly toasted
1/4 cup finely chopped red onion
1/2 cup shredded carrots
1/2 cup Greek yogurt or mayonnaise
2 tablespoons honey
1 tablespoon apple cider vinegar or lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
Wash and chop broccoli into bite-sized florets and place in a large bowl.
Rinse grapes and halve them, then add to broccoli.
Toast sunflower seeds in a dry skillet over medium heat for 2–3 minutes until fragrant.
Add red onion and shredded carrots, tossing gently to combine.
Whisk Greek yogurt, honey, apple cider vinegar, salt, and black pepper in a small bowl.
Pour dressing over salad and fold gently to coat evenly.
Sprinkle toasted sunflower seeds on top and refrigerate at least 30 minutes before serving.
