Healthy Street Corn Pasta Salad combines tender pasta, grilled corn, creamy lime dressing, chili spices, and crumbly cheese for a refreshing and hearty dish inspired by classic street corn flavors.
12 ounces rotini or fusilli pasta
2 cups sweet corn kernels (fresh or frozen)
3/4 cup plain Greek yogurt
2 tablespoons mayonnaise
2 tablespoons fresh lime juice
1 teaspoon lime zest
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup finely diced red onion
1/2 cup crumbled cotija cheese
1/4 cup chopped fresh cilantro
1 tablespoon olive oil
Cook pasta in salted boiling water according to package directions until tender but slightly firm.
Drain pasta and rinse briefly with cool water. Allow it to cool.
Heat olive oil in a skillet over medium-high heat and cook the corn until lightly charred. Let it cool.
In a large bowl, stir together Greek yogurt, mayonnaise, lime juice, lime zest, chili powder, smoked paprika, garlic powder, salt, and pepper.
Add cooled pasta to the bowl and toss until coated with the dressing.
Stir in grilled corn, diced red onion, half of the cotija cheese, and chopped cilantro.
Transfer the salad to a serving bowl and sprinkle the remaining cheese on top.
Refrigerate for at least 30 minutes before serving for best flavor.
