High Protein Slow Cooker Garlic Butter Beef Bites are tender cubes of beef slowly cooked in a rich garlic butter sauce with herbs and savory broth. This comforting dish delivers deep flavor and a satisfying protein boost while requiring very little hands-on cooking time.
2 pounds beef chuck roast or stew meat, cut into bite-size cubes
4 tablespoons unsalted butter
6 cloves garlic, minced
1 cup low-sodium beef broth
1 tablespoon Worcestershire sauce
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil for browning
1 cup sliced mushrooms (optional)
2 tablespoons chopped fresh parsley for garnish
Pat the beef cubes dry with paper towels and season them with salt, pepper, paprika, and onion powder.
Heat olive oil in a skillet over medium-high heat and brown the beef cubes for about 2 minutes per side.
Transfer the browned beef into the slow cooker in an even layer.
Melt the butter and stir in the minced garlic, thyme, and Worcestershire sauce.
