A flavorful, one-pan rice casserole featuring honey garlic chicken, fajita-style peppers, and a melty cheese topping. Perfect for weeknight dinners or meal prep.

Ingredients

1.5 lbs boneless chicken breast or thighs, sliced
1/4 cup honey
3 cloves garlic, minced
2 tbsp soy sauce
Juice of 1 lime
1 tbsp olive oil
1 red onion, sliced
3 bell peppers (mixed colors), sliced
3 cups cooked rice
1 tsp ground cumin
1 tsp chili powder
1 tsp smoked paprika
Salt and black pepper, to taste
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup shredded mozzarella cheese
Fresh cilantro or parsley (optional)

Instructions

  • In a bowl, whisk honey, garlic, soy sauce, and lime juice. Add chicken and marinate 15–30 minutes.

  • Heat olive oil in skillet and cook onions and peppers until tender. Remove and set aside.

  • In same pan, cook chicken and marinade until fully cooked and sauce thickens.

  • In a large bowl, mix cooked rice, chicken, vegetables, and seasonings. Stir well.

  • Spread mixture into a greased 9×13 baking dish. Top with cheeses.

  • Cover with foil and bake at 375°F for 20 minutes.

  • Remove foil and broil for 3–5 minutes until cheese is bubbly and golden.

  • Let rest 5 minutes, garnish if desired, and serve warm.
