A comforting Irish classic combining creamy mashed potatoes with a savory meat and vegetable filling, perfect for family dinners.
1 ½ pounds potatoes, peeled and cut into chunks
4 tablespoons butter
½ cup heavy cream
Salt and black pepper, to taste
1 tablespoon olive oil
1 pound ground beef or lamb
1 medium onion, finely chopped
2 cloves garlic, minced
2 medium carrots, diced
½ cup peas
2 tablespoons tomato paste
1 teaspoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon fresh parsley, chopped
½ teaspoon nutmeg
½ cup beef or vegetable stock
Preheat oven to 400°F (200°C). Boil potatoes until tender. Mash with butter, cream, salt, pepper, and nutmeg.
Sauté onions and garlic in olive oil until fragrant. Add meat and cook until browned.
Add carrots, peas, tomato paste, Worcestershire sauce, and stock. Simmer until thickened. Season with thyme, parsley, salt, and pepper.
Spread filling in a baking dish. Top with mashed potatoes, smoothing and creating peaks.
Bake 20–25 minutes until golden and crisp.
Rest 5–10 minutes before serving.
