A rich and creamy soup combining seasoned ground beef, hearty potatoes, and melty cheddar cheese with a hint of tangy ketchup and mustard—like a cheeseburger in a bowl.
1 lb ground beef
4 cups russet potatoes, peeled and diced
1 yellow onion, chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
3 tbsp butter
3 tbsp all-purpose flour
3 cups beef broth
1 cup whole milk
1 cup heavy cream
2 cups sharp cheddar cheese, freshly shredded
1 tbsp ketchup
1 tsp yellow mustard
Salt and black pepper, to taste
Optional: crumbled bacon, diced pickles, green onions
In a large pot, melt butter over medium heat. Add onion, carrots, and celery. Cook until soft, about 6–8 minutes.
Add ground beef. Season with salt and pepper. Cook until browned. Drain fat.
Stir in garlic and seasonings. Cook 1 minute.
Sprinkle in flour. Stir to coat and cook for 2 minutes.
Slowly add broth, stirring constantly. Add potatoes and bring to a simmer. Cook 15–20 minutes.
Reduce heat. Stir in milk and cream. Simmer gently for 5–7 minutes.
Remove from heat. Add cheddar in small handfuls, stirring until melted. Stir in ketchup and mustard.
Adjust seasoning. Serve hot with toppings of your choice.
